A Not So Bad for You Pulled Pork

I associate pulled pork with the fall. 

Recently I have been craving some, but I don’t want all of the sugar and other junk in BBQ sauce. 

I modified a pulled pork recipe to create the one below. It came out way better than I thought. This recipe is tender, juicy and super tasty. All of the qualities of good pulled pork without all of the bad stuff. 

If you don’t eat pork, try it with chicken… just as easy and delicious.

Ingredients: 

2 lb boneless pork loin

1 cup chicken broth

1 large or two medium sweet onions

3 cloves garlic

1 tbs sea salt

3/4 tbs chili powder

1 tbs coconut crystals

1/2 tsp ground cumin

1/4 tsp ground cinnamon

Instructions

  • Chop the onions and garlic and place across the bottom of the crock pot. Add the broth.
  • Mix the dry ingredients in a bowl. 
  • Dry the pork with a paper towel. Thoroughly cover the meat with the dry rub. Place the meat on top of the onions and garlic. 
  • Turn the crock pot on low and cook for 7-8 hours. If using a larger pork loin, cooking time may need to be increased to 8-10 hours. 
  • When finished cooking, put the pork in a separate dish and shred with a fork. Add back in the onion and garlic from the crock pot. Slowly add broth from crock pot until you achieve your desired moisture and tenderness level.
