I must have tried 20 pancake recipes. I couldn't get it right. Texture, ease of whipping up and cooking, all left something to be desired.
Then I modified an odd recipe to create unbelievably good, high protein, fairly healthy pancakes. These are great on the weekends, a re-feed day, or to switch up a post workout meal. Kids love them and you don't need a two hour nap to recover from a carb induced coma.

I didn't like vegetables as a kid. I would fall asleep at the dinner table because I wouldn't eat them and my parents wouldn't let me get up until they were finished.
I have now reversed my opinion. I love vegetables. Most of them, at least.

Recently I have been craving some, but I don’t want all of the sugar and other junk in BBQ sauce.
I modified a pulled pork recipe to create the one below. It came out way better than I thought. This recipe is tender, juicy and super tasty. All of the qualities of good pulled pork without all of the bad stuff.
I love nut butter! Seriously, who doesn’t? Making your own is simple and provides the benefit of avoiding preservatives and other junk found in store bought brands. The best part of blending them at home is the butter comes out nice and warm due to the friction of the blender blade. This makes it awesome for dipping veggies or spreading on fruit. The biggest challenge is not to eat the whole jar!
