Nuts for Nut Butter!

I love nut butter! Seriously, who doesn’t? Making your own is simple and provides the benefit of avoiding preservatives and other junk found in store bought brands. The best part of blending them at home is the butter comes out nice and warm due to the friction of the blender blade. This makes it awesome for dipping veggies or spreading on fruit. The biggest challenge is to not eat the whole jar!

These are the two butters I make most often. 

Ingredients:

Almond Cashew Butter

1 tsp Himalayan pink salt

1/2 tbs expeller pressed virgin coconut oil

3/4 cup raw cashews

1 1/4 cups of raw almonds

Directions:
Use a powerful blender. I use a Blendtec and I am pretty sure that it could turn rocks into a butter if you tried. 

Add salt, coconut oil, cashews and almonds to blender in that order. Blend on a medium/high speed for 90 seconds. On the Blendtec I use speed 7. 

With a traditional blender you will have to stop every several seconds and push the nuts into the bottom of the blender. 

Blend until you get a smooth consistency

Chocolate Peanut Butter - for the kids

Ingredients:

1/2 tsp Himalayan pink salt

1/3 cup enjoy life semi sweet mini chocolate chips

1 1/2 cups unsalted peanuts

Directions:

Add salt, chocolate chips and peanuts to the blender in that order

Blend on medium speed setting until you get a smooth consistency (30 seconds in a Blendtec)

Peanuts blend much easier than almonds and if you blend too long, you get more of a peanut butter sauce.
Store in a mason jar

Go ahead and experiment with your nut butter. Add dates, figs, honey, etc. the options are limitless. Take action and go nuts!
