Re-Feed Granola

Saturday is a re-feed day for me. I increase my calories above my standard week day amount, and try to do so without eating junk. One of my favorite ways to accomplish this is home made granola. Check out this recipe. It is easy and doesn’t take too long.

Ingredients: 

2 Cups gluten free old fashioned whole oats

1 cup organic raisins (can substitute with other dried fruit)

3/4 cup whole or sliced raw almonds

1/2 cup raw cashews

1/2 cup raw coconut crystals

1/2 cup raw organic unsweetened shredded coconut

1/2 cup unsweetened flaked coconut

1/4 cup almond flour

1/4 cup chia seeds

1 tsp ground cinnamon

1 tsp pumpkin pie spice or allspice

1 tsp course crystal sea salt

4 tablespoons grass fed butter (Kerrygold) 

2 tablespoons pure maple syrup

3/4 cup enjoy life semi sweet mini chips

Instructions:

Heat oven to 300 degrees

Combine dry ingredients in mixing bowl and stir

Combine butter and maple syrup and melt

Mix butter/maple syrup with dry ingredients

Spread mix on a cookie sheet and bake for 20-25 min. Granola should be lightly browned.
